Calzones

Ingredients for the dough:

2 packets of yeast
1 cups warm water
1 teaspoon sugar
2 cups bread flour
1 teaspoon salt
4 tablespoons sugar
2 and two-thirds tablespoons olive oil

Ingredients to fill calzones:

Marinara or pizza sauce for inside calzone or for dipping
Cheese-Mozarella, cheddar, Parmesan
Meats-pepperoni, Canadian bacon, sausage, etc.
Vegetables-mushrooms, peppers, onions (caramelized or uncooked), spinach work best
Anything you enjoy on a pizza would work well

Directions:

  1. Preheat oven to 400 degrees.
  2. Stir 1/3 cup warm water, yeast and 1 teaspoon sugar together in small bowl. Set aside to let it work; should begin bubbling fairly quickly, and look like it is growing in size.
  3. In a separate, large bowl, stir remaining dry ingredients together.
  4. Mix in remaining warm water and yeast mixture. If dough looks too dry, you may need to add a little more warm water. If dough looks too wet or sticky, you may need to mix in a little more bread flour.
  5. Cover bowl and set aside to let rise for about 45 minutes to 1 hour.
  6. After dough has risen, separate into 4 equal pieces and place on a floured surface (use bread flour).
  7. Call your family into the kitchen for calzone-making fun.
  8. Flatten and roll each into a circle, about 6 inches.
  9. Place fillings of your choice onto one side of the dough circle.
  10. Fold other side over fillings and pinch sides to seal.
  11. Place on greased cookie sheet.
  12. You may want to brush the top of calzones with egg wash to encourage browning.
  13. Bake at 400 degrees for 15 minutes.
  14. Serve with warmed pizza or marinara sauce for dipping.
  15. Enjoy!
